Locust Bean Gum

Locust Bean Gum, so called LBG, is a polysaccharide obtained from the carob seed(sometime it is described as Carob Kernel). The seed can be got from Carob tree(scientific name:Celatonia Siliqua L.). The tree prefers relatively warm and dry weather condition, it is normally cultivated or naturally grown in the areas around Mediterranean. The main component of LBG is Glactomannnann which is constituted with Mannnose and Galactose, composition ratio of these is 4:1.

Feature

Can be used as thickner

LBG is dissolved in the water completely by heating at 80-85 centigrade.
The solution has pseudoplasticity, so apparent viscosity decreaases by increasing shear stress.

  • Synerysis is expected by using with other polysaccharide such as Carrageenan, Xhantan Gum, etc..
    For example, it can make the gel more elastice and add various texture to the gel.
  • There is a cold soluble type in our product line-up. This is a special grade manufactured with unique technique.
  • All types are certified for Halal and Kosher.
